Linda wins Beaumaris Rotary Mystery Basket Challenge

Linda’s Saucy Apple Pudding was the delicious stand-out entry. 

We’re delighted to announce the winner of the Farmers’ Market Mystery Basket Challenge is Linda Weiss with her Saucy Apple Pudding.         

Linda was presented with her winner’s bottle of champagne by judge David Whitfield of Küche Inspirational Foods at today’s Royal Avenue Farmers’ Market.

Beaumaris Rotary asked, “What’s your favourite dish using only the ingredients in the Farmers’ Market Mystery Basket”. Linda’s Saucy Apple Pudding was the delicious stand-out entry. Congrats Linda!

Saucy Apple Pudding by Linda Weiss of Beaumaris 

3 free range eggs (separated) 
30g of butter (for cooking the apples)
2 tablespoons a favourite strong flavoured honey
2 medium sized Granny Smith apples peeled and cored
1/2 cup of brown sugar 
50g of butter (at room temperature)
3 tablespoons of self-raising flour 
3/4 cup of milk 
30-40g of dark chocolate for shaving over the top of the pudding 
icing sugar for dusting over the top of the pudding 
1/2 a vanilla pod scraped and stirred through 
300ml of dollop cream (for serving) 

Preheat oven to 180 degrees, 170 degrees if fan forced.  Cut apples in cubes and cook apples in 30g of butter and your honey of choice until tender and syrupy but not mushy. Put in the bottom of a greased 20cm oven proof pudding dish.  Beat egg whites until stiff.  Using electric beaters cream butter and brown sugar until smooth, add egg yolks and combine, then flour and mix well then add milk and beat until smooth.  Fold through egg whites gently and pour mixture over apples.  Place pudding dish inside another dish and fill up with water so it comes up the side of the pudding dish.  Cook for approximately 45mins until top is golden and centre isn’t wobbly when dish is tilted gently.
